SPINACH PARCELS WITH SEAFOOD
Prepare and refrigerate Spinach Parcels the day before required Prepare stock for Sauce several hours before, complete Sauce as close to serving time as possible.
INGREDIENTS:
- 125g feta cheese
- 30g stuffed olives
- 1 tomato
- 2 tablespoons sour cream
- pepper
- spinach leaves
- 15g butter
SEAFOOD SAUCE
- 500g green prawns
- 2 cups water
- ½ cup cream
- 1 egg yolk
- salt,
- pepper
SPINACH PARCELS WITH SEAFOOD RECIPE:
Cut feta cheese into small cubes combined with finely chopped olives. peeled and chopped tomato, sour cream, and pepper, mix well. Cook spinach leaves in boiling water for 1 minute, drain, and cut away stalks. Pat leaves dry with absorbent paper Divide cheese mixture evenly between spinach leaves down centre at one end. Roll up, enclosing ends. Place rolls in an ovenproof dish, dot with butter, cover, and bake in a moderately hot oven for 15 minutes until heated through.
Top with Seafood Sauce. Seafood Sauce: Shell and devein prawns, reserve shells. Place shells and water into the pan, and bring to a boil. reduce heat, simmer covered 15 minutes. Strain stock through a fine sieve. Return stock to the pan, bring to a boil, add prawns, and cook until just tender, about 2 minutes, drain immediately, reserving % cup of the stock. Place reserved stock, cream, and egg yolk into pan, and stir over low heat until sauce thickens, do not boil Add prawns, mix well, and season with salt and pepper
Serves 4.
