 SAUCES FOR OYSTERS 

Try these sauces over fresh oysters or any seafood.

SEAFOOD COCKTAIL SAUCE 

  • 2 egg yolks 
  • 90g butter 
  • 2 teaspoons lemon juice 
  • ½ teaspoon Tabasco 
  • 2 teaspoons tomato paste 
  • 2 tablespoons cream 

Combine in top of double saucepan egg yolks, butter, and lemon juice. Stir over simmering water until the sauce has thickened. Remove from heat, stir in Tabasco and tomato paste, mix well, stir in cream, pour the sauce into a small bowl, cover with plastic wrap, and cool to room temperature. Do not refrigerate or the butter will set firmly. 

Makes approximately ½ cup.

ANCHOVY SAUCE 

  • 1 cup mayonnaise 
  • 1 clove garlic 
  • 45g can anchovy fillets 
  • 1 tablespoon chopped parsley 
  • 1 tablespoon tomato sauce 

Combine finely chopped anchovy fillets, crushed garlic, and other ingredients. 

TARTARE SAUCE

  •  ½ cup mayonnaise 
  • 1½ tablespoons sour cream 
  • 2 teaspoons chopped fresh dill 
  • 1 teaspoon chopped chives 
  • 2 teaspoons chopped parsley 
  • 1 teaspoon capers 
  • 3 shallots 
  • 1 teaspoon lemon juice 
  • salt, 
  • pepper 

Finely chop shallots and capers; combine all ingredients.
