SEAFOOD WITH SMOKED SALMON CREAM
Prepare sauce up to three hours before serving.
INGREDIENTS:
- 250g scallops
- 250g cooked prawns
- 8 oysters
- 2 shallots
- salt,
- pepper
- 2 cups water
- 30g butter
- 2 tablespoons plain flour
- 2 slices smoked salmon
- ½ cup cream
- 2 tablespoons dry white wine
- 1 teaspoon lemon juice
- 2 tablespoons chopped chives
SEAFOOD WITH SMOKED SALMON CREAM RECIPE:
Clean scallops, place in pan with water, chopped shallots. salt and pepper Bring to a boil, reduce heat. simmer 1 minute. Strain scallops, reserve stock, remove shallots. Measure 1½ cups of reserved stock Heat butter in a pan, add flour, and stir over heat for 1 minute Gradually add reserved stock, wine, and lemon juice, and stir over heat until mixture boils and thickens.
Place roughly chopped salmon in a blender or food processor, add cream, and blend until smooth. Add salmon mixture to sauce, and mix well: season with salt and pepper. spoon hot sauce over scallops. shelled prawns and oysters, sprinkled with chopped chives
Serves 4.
