Microwave Eves Pudding

INGREDIENTS

  • 350 g or 12 oz cooked apple slices 
  • 1 x 15 ml or 1 tbsp caster sugar
  • juice of half a lemon
  • 100 g or 4 oz margarine
  • 100 g or 4 oz caster sugar
  • 2 eggs, beaten
  • 100 g or 4 oz self-raising flour
  • 1 x 15 ml or 1 tbsp milk

Microwave Eves Pudding Method:

Mix together the apple, lemon juice, and caster sugar. Put in the base of the flan dish.
Margarine and sugar are whipped together until light and fluffy. Add the egg and finally fold it in the flour.

Stir in the milk until it reaches a soft consistency. Spread the mixture over the apples.
Smooth the top with a spoon. Cook on MEDIUM for 8-10 minutes.

Power: MEDIUM

Serves 4

Cooking time: 8-10 mins.

Dish: 20 cm ( 8 " ) flan dish
