Microwave Chocolate Mousse
INGREDIENTS
- 150 g or 6oz plain chocolate,
broken into pieces
- 3 x 15 ml or 3 tbsp strong black
coffee
- 1 x 15 ml 1 tbsp brandy or rum
- 4 eggs separated
To decorate :
- 150 ml or ½ pt double cream, whipped
- chocolate buttons
Microwave Chocolate Mousse Method:
Put the chocolate, coffee, and brandy in a basin and heat on HIGH for 1½ - 2½ minutes, stirring occasionally until melted. Blend in the egg yolks. Cool slightly.
Mix the chocolate mixture with the whipped egg whites. Pour into a souffle dish and chill for at least 3 hours. Decorate with whipped cream and chocolate buttons.
Variations :
- For those who don't like coffee, replace it with 3 x 15 ml ( 3 tbsp ) orange juice and the finely grated rind of I orange. This gives a very nice tang to the mousse.
- It is delicious and made with white chocolate, omit coffee, and brandy, but add 4 x 15 ml ( 4 tbsp ) Cointreau or Amaretto.
