COFFEE LIQUEUR 

  • 1 cup sugar
  • 1 tablespoon instant coffee powder 
  • 1 cup water
  • 2 teaspoons vanilla 
  • 1 cup brandy 
  • 1½ tablespoons rum 

Combine sugar, coffee, and water in a pan, and stir over heat until sugar is dissolved. Bring to a boil, and reduce heat. simmer uncovered for 3 minutes. Remove from heat, cool to lukewarm, add vanilla, brandy, and rum. Pour into a sterilized bottle or jar, seal, and store in a cool dark place for 2 weeks. 

Makes about 2 cups.

STRAWBERRY LIQUEUR 

  • 2 punnets ( 500g ) strawberries 
  • 2 cups gin 
  • 1 cup sugar 

Wash and hull strawberries, cut in half, place in china or plastic container with gin, cover tightly, and stand for 2 days. Add sugar, stir to dissolve, and strain: pour into a sterilized bottle or jar, seal, and stand in a cool dark place for at least 2 weeks. 

Makes about 2½ cups. 


CHOCOLATE CREAM LIQUEUR 

  • 400g can sweetened condensed milk 
  • 300ml carton cream 
  • 3 eggs 
  • 1 cup whisky 
  • 1½ tablespoons bottled chocolate topping 
  • ½ teaspoon coconut essence 

Blend or process all ingredients together. Pour into a sterilized bottle or jar, seal, and store in a cool dark place. This drink does not require refrigeration or keeping time for flavors to develop. 

Makes about 4 cups. 


CUMQUAT LIQUEUR 

Eat the cumquats after drinking the liqueur- they are delicious with cream or ice cream.

  •  500g cumquats 
  • 2 cups sugar 
  • 750ml bottle brandy 

Wash cumquats, prick well with Combine all in the darning needle. ingredients in a large sterilized jar fitted with a plastic lid. Reverse the jar each day to dissolve sugar. Do this for 4 weeks Strain into a sterilized bottle or jar, seal, and store in a cool dark place. 

Makes about 3 cups
