MINTED LIME PUNCH

  •  1 lime or lemon mint leaves 
  • 1 cup bottled Lemon and Lime Barley Water 
  • 1.25-litre bottle of Club Soda Squash 
  • 1.25-litre bottle of soda water 

Set some whole mint leaves in ice cubes to use in the punch just before serving Slice lime or lemon thinly Combine chilled barley water, Soda Squash, and lemon slices, add chilled soda water just before serving: add mint ice cubes. 

Makes about 2  3/4, of liters.

 COCONUT PINEAPPLE PUNCH 

  • 420g can of coconut cream 
  • 1/2 cup vodka 
  • 3 cups canned pineapple juice 
  • 1 tablespoon icing sugar 
  • 2 tablespoons creme de menthe 

Combine coconut cream, vodka, pineapple juice, icing sugar, and creme de menthe in a large bowl, and mix well Refrigerate before serving 

Makes 1½ liters. 

STRAWBERRY CHAMPAGNE PUNCH 

  • 3 punnets strawberries 
  • 2/3 cup icing sugar 
  • ½ cup Grand Marnier 
  • 2 tablespoons lemon juice 
  • 2 x 750ml bottles of champagne 

Hull strawberries. Place 2 % punnets of strawberries in a blender or processor; add icing sugar. Grand Marnier and lemon juice, blend on high speed until pureed. Place strawberry mixture in punch bowl; just before serving, add cold champagne and remaining chopped strawberries. 

Makes 2½ litres. 

PINEAPPLE TEA PUNCH 

  • 1 ripe pineapple 
  • 2 cups cold black tea 
  • 12 mint leaves 
  • 2 x 285ml bottles dry ginger ale 

Peel pineapple. remove core. chop pineapple roughly Place half the chopped pineapple, 1 cup of the black tea, and mint leaves into a blender or processor, and blend on high speed for 30 seconds or until the pineapple is finely crushed Repeat with the remaining pineapple and black tea Refrigerate pineapple mixture until cold. Just before serving. top with chilled ginger ale. 

Makes about 1 1/2 litres 

FRUIT PUNCH 

  • 450g can of crushed pineapple 
  • 3 passionfruit 
  • 1 cup lemon juice ( approximately 5 lemons ) 
  • 2 cups orange juice ( approximately 6 oranges ) 
  • 500ml bottle of soda water 
  • 1 tablespoon sugar 

Combine undrained pineapple. passionfruit pulp, lemon and orange juices, and sugar in a large bowl or jug. refrigerate until well chilled. Just before serving add chilled soda water, stir to combine. 

Makes about 1 1/2 liters. 

FRUIT SHERRY PUNCH 

  • 1 cup orange juice 
  • 1 cup apple juice 
  • 3/4 cup dry sherry 
  • 500ml bottle of ginger ale 
  • 500ml bottle of soda water 
  • 1 lemon 
  • ½ cucumber and 
  • 1 tablespoon chopped mint 

Combine orange juice and apple juice. sherry, finely sliced lemon cucumber, mix well; refrigerate. Just before serving, add chilled ginger ale, soda water, and mint. 

Makes about 1 3/4 liters.
