BRANDIED LIME MARMALADE
Some limes are seedless they are fine for this recipe. Limes are so rich in pectin that they do not need help from the extra pectin in the seeds.
INGREDIENTS:
- 1kg limes ( about 12 medium )
- 2 litres water
- 2kg sugar, approximately
- ½ cup brandy
BRANDIED LIME MARMALADE RECIPE:
Wash
limes, and slice them as finely as possible. discard seeds. Place limes in a basin with water, cover, and stand overnight. Next day, place lime mixture in the boiler, cover, bring to a boil, reduce heat, and simmer covered for 1 hour or until the rind is tender.
Measure the mixture; allow one cup of sugar to
each one cup of mixture. Return lime mixture and sugar to the boiler, and stir over
high heat without boiling until sugar is dissolved. Bring to boil, boil as
rapidly as possible uncovered without stirring for 20 minutes or until jam will
jell when tested on a cold saucer. Stand for 5 minutes, stir in brandy, pour
into hot sterilized jars, and seal when cold.
Makes about 9 cups
