APRICOT RUM CONSERVE
INGREDIENTS
- 500g dried apricots
- 1 litre water
- ½ cup lemon juice
- 1kg sugar
- 2 tablespoons rum
APRICOT RUM CONSERVE RECIPE:
Combine apricots, water, and strained lemon juice in the pan, cover, bring to a boil, reduce heat, and simmer covered 30 minutes, or until apricots are tender. Add sugar, and stir without boiling over high heat until sugar is dissolved. Bring to boil, boil rapidly uncovered. without stirring, for about 15 minutes or until the mixture is thick and will drop. heavily from a spoon; check by allowing a spoonful to sit on a cold saucer. Allow bubbles to subside, stir in rum, pour into hot sterilized jars, and seal when cold.
Makes about 6 cups.
