MANDARIN MARNIER MARMALADE 

INGREDIENTS:

  • 1kg mandarins ( about 16 small ) 
  • 2 liters water 
  • 2kg sugar, approximately 
  • 3 tablespoons Grand Marnier 

MANDARIN MARNIER MARMALADE RECIPE:

Wash fruit, slice as finely as possible, and reserve seeds. Place seeds in a small basin, cover with a little extra water and stand overnight. Place sliced fruit and water in separate basins, cover, and stand overnight. 

Next day, strain seeds, reserve liquid, use a spoon to press as much liquid as possible from seeds, discard seeds, and place the liquid in a large boiler with fruit mixture. Cover, bring to boil reduce heat, and simmer, cover, for 45 to 60 minutes or until the rind is tender. Measure the fruit mixture and allow one cup of sugar to each cup of fruit mixture. Return the fruit mixture to a boiler with sugar. 

Stir jam constantly over high heat without boiling until sugar is dissolved. Bring to boil, boil rapidly uncovered without stirring until jam will jell when tested on a cold saucer; this will take 30 to 40 minutes. Stand for 5 minutes, stir in Grand Marnier, pour into hot sterilized jars, and seal when cold. 

Makes about 9 cups.
