Microwave Savoury Parsnip Layer
INGREDIENTS
- 750 g or 1½ lbs parsnips, pared and grated or thinly sliced
- 1 x 396 g or 14 oz can tomatoes ( drained )
- 100 g or 4 oz streaky bacon, diced
- 2x 5 ml or 2 tsp sugar
- salt and ground black pepper
- 100 g or 4 oz cheddar cheese, grated
- 150 ml or 1/4 pt single cream
- 50 g or 2 oz breadcrumbs
- 25 g or 1oz butter and margarine
Microwave Savoury Parsnip Layer Method:
Mix together bacon and tomatoes. Arrange a layer of parsnips in a casserole dish, and cover with a layer of tomatoes. Season and sprinkle with a bit of sugar Cover with a third of the cheese and a little cream. Repeat layers ending with cheese. Sprinkle over breadcrumbs, and pour over any remaining cream.
Dot with butter. Cover with cling film and cook on HIGH for 10 minutes ( for a crisp result or on HIGH for 15 minutes for a soft result ) or on Auto. Stand for 5 minutes before serving.
Alternatives :
- Substitute parsnips for carrots or potatoes.
- Add a finely chopped onion to the tomatoes.
