Microwave Fennel and Orange Ratatouille
INGREDIENTS
- I medium aubergine
- 1 x 5 ml or 1 tsp salt
- ½ / 2 green, yellow, and red pepper
- I onion
- I fennel bulb
- I clove of garlic, crushed
- 2 courgettes
- 1 x 396 g or 1 x 14 oz tin of
chopped tomatoes
- black pepper
- 1 x 5 ml or 1 tsp arrowroot or
cornflour
- grated rind and juice of 1 orange
Microwave Fennel and Orange Ratatouille Method:
Cut the aubergine into quartered slices. Place them in a sieve and sprinkle with salt.
Leave to drain for half an hour. Dice the pepper, onion, and fennel, crush the garlic, and
slice the courgettes
In a large casserole mix all of these with the tomatoes, season with black pepper and stir in the arrowroot and orange rind. Rinse the aubergine in running water and drain thoroughly.
Add to the rest of the ingredients. Cover and cook on HIGH for 18-20 minutes or on Auto. After cooking, stir in the orange juice. This is delicious served hot or chilled
