Microwave Lentil Moussaka Recipe
INGREDIENTS
- 50 g or 2 oz Margarine
- 2 onions, finely chopped
- 2 cloves garlic, crushed
- 100 g or 4 oz lentils
- 1x 15 ml or 2 tbsp tomato purée
- 300 ml or ½ / 2 pl stock
- I large aubergine, sliced
Microwave Lentil Moussaka Method:
Put margarine, onions, and garlic into a bowl and cook on HIGH for 3 minutes. Add the lentils, tomato purée, and stock and cook on LOW for 20 minutes. Leave the mixture to stand until cold. In a suitable container, layer the aubergine and lentil mixture Cover with cling film, and cook on HIGH for 7-9 minutes.
Power: HIGH - LOW
Serves 4
Cooking time: 30 mins.
