Microwave Breton Beans Recipe
INGREDIENTS
- 225 g or 8 oz dried butter beans
- 2 onions
- 2 cloves
- I carrot, peeled and sliced
- 2 cloves garlic, crushed
- 2.5 ml or ½ tsp mixed herbs
- 2 bay leaves
- black pepper
- 1 x 396 g or 14 oz can of chopped tomatoes
- chopped parsley to garnish
Microwave Breton Beans Method:
Place the beans in a casserole dish with I-liter ( 2 pts . ) hot water.5 minutes on HIGH with the cover on. Peel one onion and spike with the cloves. Drain the beans, and stir in the onion, carrot, garlic, herbs, and bay leaves. Season with black pepper.
Add a fresh I-litre ( 2 pts . ) hot water to the beans, cover the dish, and cook on LOW for 30-35 minutes or until beans are tender. Peel the remaining onion and chop finely.
Put the onion and tomatoes into a bowl and cook on HIGH for 6 minutes. Drain the beans, and discard the onion with cloves. Mix in the tomato sauce. Serve sprinkled with parsley.
Power: HIGH – LOW
Serves 4
Cooking time: 50 mins.
