Microwave Stuffed Peppers 

INGREDIENTS

  • 4 peppers ( red or green )
  • 375 g or 12oz mince
  • I onion, peeled and sliced
  • 150 ml or ½ pt red wine or stock
  • 1 x 396 g or 14 oz can tomatoes ( drained )
  • 2 x 15 ml or 2 tbsp tomato purée
  • 1 x 15 ml or 1 tsp cornflour
  • 1 x 5 ml or 1 tbsp mixed herbs
  • 100 g or 4oz gruyere cheese

Microwave Stuffed Peppers Method: 

Slice a lid off the top of each pepper and reserve. Remove the seeds and pith without puncturing the skin. Mix together all the ingredients for the filling in a large casserole. 
Cover with a lid or cling film and cook on All or on MEDIUM for 25 minutes. Leave to cool slightly

Fill the peppers and replace the lids, place them on a dish. cover with cling film and cook on Auto or on HIGH for 10 minutes. Sprinkle with the grated cheese Cook for 3-5 minutes until the cheese is melted.
