Microwave Aubergine Fiesta Recipe

Microwave Aubergine Fiesta 

INGREDIENTS

• 450 g or 1lb aubergines

• 25 g or 1 oz butter

• 1 x 198 g or 14 oz can tomatoes, drained

• I clove garlic, crushed

• salt and pepper

• 1 x 396 g  or7 oz sweetcorn , drained 

Microwave Aubergine Fiesta Method:

Peel and cut aubergines into slices then cut each slice into quarters. Put them with the butter in a casserole dish and cook on HIGH for 5 minutes. Add the rest of the ingredients, cover, and cook on HIGH for 12 minutes, or on Auto. Stand for 5 minutes before serving.
