Dish : Souffle dish + jug + serving dish
- 1 cauliflower, trimmed.
- 4x 15 ml. or 4 tbsp water
- 2 rashers bacon, chopped
- I onion, finely chopped
- 50 g or 2oz Butter
- 50 g or 2oz flour
- 600 ml 1 pt milk
- 100 g or 4 oz cheese, grated
- salt and pepper
- 2 eggs, hard-boiled and shelled
- 2 tomatoes, sliced
Microwave Cauliflower Cheese Method:
Cut a cross in the base of the cauliflower and put it upside down in a dish. Add 4 x 15 ml ( 4 tbsps . ) water. Cover with a lid or cling film. Cook on HIGH for 6-7 minutes or on Auto. When cooked remove cling film and leave to cool.
Put the bacon, onion, and butter in a jug and heat on HIGH for 3 minutes. Blend in the flour and gradually add the milk, stirring well after each addition. Heat on HIGH for 2 minutes then stir in the cheese.
Heat for a further 1-2 minutes when the sauce should be thick. Season to taste. Drain the cauliflower and put on a suitable dish. Arrange egg and tomato slices over and around the cauliflower.
Pour over the cheese sauce. Cook on HIGH for 5 minutes. Flash under a hot grill to brown, if required.
Variation: Use Stilton cheese.
