Microwave Plum Pudding

INGREDIENTS

  • 225 g or 8 oz plain flour
  • 100g or 4 oz suet
  • water to mix
  • 1.4 kg or 2½ lb plums
  • 100 g or 4 oz sugar 

Microwave Plum Pudding Method:

Mix flour and suet together in a large bowl. Bind to a dough with a little cold water.
Turn onto a floured surface and lightly knead. Roll into a circle large enough to fit the basin.

Cut out a triangle and ease the pastry into the basin, allowing a 1 cm ( 12 " ) overhang.
Trim excess. Fill with plums and add sugar. Reshape the trimmings and triangles and roll them out to form a lid.

 Moisten the edges of the pastry and cover with the lid. Seal the edges well. Cook on HIGH for 12-14 minutes.

 Power: HIGH

Serves 4

Cooking time: 12-14 mins.

Dish: 1-4 liter ( 22 pt ) basin
