Microwave Lemon Layer Pudding

INGREDIENTS

  • juice and rind of 1 lemon
  • 50g or 2 oz butter
  • 100 g or 4oz sugar
  • 2 eggs, separated
  • 300 ml or  1/2 pl milk
  • 50 g or 2oz self-raising flour 

Microwave Lemon Layer Pudding Method:

Put the lemon rind, butter, and sugar in a bowl. Cream well until light and fluffy. Add the egg yolk and flour, and beat well. Gradually stir in the milk and 30-45 ml ( 2-3 tablespoons ) lemon juice. Mix the egg whites with the mixture until stiff, then fold them into the mixture.

Pour the mixture into an 18 cm ( 7 " ) souffle dish ( this will fill the dish almost to the top as the cake does not rise . )Cook on MEDIUM for 5 minutes. The top should be just set. The pudding separates out in cooling to a layer of custard on the base and a sponge on top.

Note: It is quite delicious.

Serves 4

Cooking time: 5 mins.

Dish : 18 cm ( 7 " ) souffle
