Microwave Kedgeree Recipe

INGREDIENTS

  • 450 g or1lb smoked fish
  • 150 g or 6 oz long-grain rice
  • 75 g or 3oz butter
  • 600 ml or1 pint hot water
  • 2 hard-boiled eggs
  • black pepper 

Microwave Kedgeree Method:

Put rice in a dish with water, and cook on MEDIUM for 15 minutes. Put the fish on a plate, cover it with cling film, and cook on HIGH for 5 minutes or on Auto. Flake fish, and mix into rice with the butter.Season with black pepper.Pile onto a serving dish and garnish with slices of hard-boiled egg.
