- 2 rashers bacon
- I onion
- 1/2 red pepper
- 1/2 green pepper
- 25 g or 1 oz Margarine
- 150 g or 6 oz long-grain rice
- 450 ml or 3/4 pint chicken stock
- sachet powdered saffron
- 1 x 5 ml or tsp salt
Microwave Savoury Rice Method:
Chop the bacon, peel and slice the onion and deseed and chop the peppers. Put them in the casserole dish with the margarine and cook on HIGH for 3-5 minutes, until soft. Add the rice, stock, saffron, and salt. Cover and cook at MEDIUM for 15 minutes. Stir and leave to stand for 5 minutes. Fluff up with a fork and serve.
