Microwave Griddle Scones

INGREDIENTS

  • 225g or 8oz self-raising flour
  • pinch salt
  • pinch grated nutmeg
  • 50 g or 2oz butter
  • 50 g or 2oz caster sugar
  • 50 g or 2oz dried fruit
  • 1 egg
  • Milk to mix

 Microwave Griddle Scones Method:

Preheat the empty browning dish on HIGH for 6 minutes. Toss the sugar and fruit with the dry ingredients, then rub in the butter. Add the egg and enough milk to form a firm dough. 

Turn onto a floured surface and roll into a rectangle 5 mm ( 1/4 " ) thick, cut into 5 cm ( 2 " ) circles. When the browning dish is hot, add 15 ml ( 1 tbsp ) oil, and heat for a further 1-2 minutes. 

Add 5-6 scones at a time, cook on HIGH for 20-30 seconds until brown, turn over, and cook for a further 1 minute on HIGH. Remove cooked scones, reheat the browning dish for 2 minutes, add more oil and heat for a further 1-2 minutes, continue cooking scones as before. Serve hot or cold.

Makes 12-16 scones

Cooking time: 1½ mins. per batch
