Microwave Figgie Bran Bread Recipe

INGREDIENTS

  • 100 g or 4oz bran dark
  • 50 g or 2oz soft brown sugar
  • 50 g or 2oz honey
  • 100 g or 4oz dried figs
  • 50 g  or 2oz walnuts, chopped
  • 300 ml or ½ pint milk
  • 125 g or 5oz self-raising wholemeal flour
  • grated rind I orange
  • pinch salt

Microwave Figgie Bran Bread Method:

Line the base of the loaf dish with greaseproof paper. Combine all ingredients and mix to a stiff paste-like consistency. Tip the prepared mixture into a loaf dish and smooth over the surface. 

Cook on HIGH for 7 minutes. After 4 minutes shield either end of the dish with strips of foil. Cool for 5 minutes in the dish before turning out.

 Alternative mixes:

  • Use apricots and almonds instead of figs and walnuts. 
  • Substitute 2 mashed bananas for the figs. 
  • All-Bran can be used instead of bran, however, first heat the All-Bran and milk together on HIGH for 2 minutes and leave to cool for 5 minutes before adding the remaining ingredients.
  •  A thick-cut marmalade or ginger preserve can be used instead of honey

Makes 10-12 slices

Cooking time: 7 mins.

Dish: 750 g (1 ½ lb ) loaf dish.
