INGREDIENTS
- 100 g or 4oz bran dark
- 50 g or 2oz soft brown sugar
- 50 g or 2oz honey
- 100 g or 4oz dried figs
- 50 g or 2oz walnuts, chopped
- 300 ml or ½ pint milk
- 125 g or 5oz self-raising
wholemeal flour
- grated rind I orange
- pinch salt
Microwave Figgie Bran Bread Method:
Line the base of the loaf dish with greaseproof paper. Combine all ingredients and mix to a stiff paste-like consistency. Tip the prepared mixture into a loaf dish and smooth over the surface.
Cook on HIGH for 7 minutes. After 4 minutes shield either end of the dish with strips of foil. Cool for 5 minutes in the dish before turning out.
Alternative mixes:
- Use apricots and almonds instead of figs and walnuts.
- Substitute 2 mashed bananas for the figs.
- All-Bran can be used instead of bran, however, first heat the All-Bran and milk together on HIGH for 2 minutes and leave to cool for 5 minutes before adding the remaining ingredients.
- A thick-cut marmalade or ginger preserve can be used instead of honey
