INGREDIENTS
- 225 g or 8oz plain flour
- 1½ x5 ml or ½ tsps caster sugar
- 1½ x 5 ml or 1½ tsp dried yeast
or
- 15 g or 1/2 fresh yeast
- 75 ml or 3oz warm milk
- salt
- butter
- 1 egg, beaten
filling :
- 25 g or 1oz butter, melted
- 75 g or 3oz mixed dried fruit
- 50 g or 2oz dark brown sugar
Microwave Chelsea Buns Method:
Sieve the flour and salt into a bowl. Rub in the butter. Put the yeast and sugar in a jug with the warm milk. Cover and leave to froth. Warm the flour mixture for 30 seconds on HIGH.
Pour frothy yeast-beaten egg onto the dry ingredients. Knead dough until smooth and elastic. Place dough in an oiled plastic bag and leave until double in size. Knock back the dough and roll it into a 30 cm x 20 cm ( 12 " x 8 " ) oblong.
Brush with melted butter, sprinkle over sugar and fruit. Roll the dough up from the long edge, and cut it into 2.5 cm ( 1 " ) pieces. Arrange in the dish. Cover with a plastic bag and prove until the dough has doubled in size. Cook on HIGH for 3-5 minutes. Decorate with glacé icing and cherries
