INGREDIENTS
- 150 g or 6oz margarine
- 150 g or 6oz dark soft brown
sugar
- 100 g or 4oz wholewheat flour
- 100 g or 4oz self-raising
wholemeal flour
- 1x5ml or 1 tsp mixed spices
- 2.5 ml or ½ tsp nutmeg
- 3 eggs
- 2x 15 ml or 2 tbsp black treacle
- pinch bicarbonate soda
- 2 x 15 ml or 2 tbsp brandy
- 675 g or 1 ½ lb mixed dried fruit
- 50g or 2oz glace cherries
- 50g or 2oz mixed peel
- 50g or 2oz chopped almonds
Microwave Christmas Cake Method:
Line the base of the souffle dish with a circle of greaseproof paper. Cream together the margarine and sugar. In a jug combine eggs and treacle. Gradually add this to the creamed mixture, beating well after each addition.
Mix together the flour, spices, and bicarb of soda. Toss the cherries and peel in a little flour. Add half the flour, fruit, cherries and peel to the mixture, fold in carefully. Repeat with the remaining ingredients and add the almonds and lastly the brandy. Tip the cake mix into the prepared dish and smooth over the surfaces so that it is as flat as possible.
Cook on SIMMER for 40-60 minutes. When the cake is cooked, cool it in the dish for 15 minutes before turning out. When completely cold wrap the cake in foil and store it in a cool dark place.
To mature the cake, pierce it all over using a skewer and then sprinkle it with rum, brandy, or sherry. Re-wrap the cake in foil. Repeat this 2-3 times for a really moist rich cake.
