Microwave All - In - One Sponge Cake Recipe

Power: MEDIUM

Makes 8-10 slices

Cooking time: 7-8 mins.

Dish : 18 cm ( 7 " ) pyrex souffle dish

INGREDIENTS

150 g or 6oz  self-raising flour

100 g  or 4oz soft margarine

100 g or 4oz caster sugar

2 eggs

2 x 15 ml or  2 tbsp milk

 

Microwave All-In-One Sponge Cake Method:

    1. Line the base of the souffle dish with a circle of kitchen paper.
    2. Combine all the ingredients in a mixing bowl.
    3. Beat well until smooth.
    4. Tip into the prepared dish and smooth over the top.

 

Variations :

 Chocolate cake :

    1. Use 5 oz flour and 1 oz cocoa.
    2. Cook on MEDIUM for 7-8 minutes.
    3. Cool slightly before turning out onto a rack to cool.

 Coconut cake :

    • Substitute 50 g ( 2 oz ) flour with 50 g ( 2 oz ) desiccated coconut.

 Chocolate chip cake :

    •  Add 100 g ( 4 oz ) chocolate chips to the mixture.

 Marble cake :

    1. At the end of making the cake divide the mixture between 3 basins.
    2. Flavor one with a few drops of vanilla essence.
    3. Color the second bowl with red food coloring.
    4. For the third one mix 1 x 15 ml ( 1 tbsp ) cocoa powder with a little milk to make a paste, stir this into the third bowl.
    5. Spoon alternate colors into the dish.
    6. Swirl through with a knife and smooth over the top. 
    7. Cook as above. 
    8. Decorate with buttercream as desired.
