 A rag doll and number building blocks are one way of learning to count

BUILDING BLOCKS CAKE

 MATERIALS

  • 2 x 15cm ( 6in ) square cakes
  • 30cm ( 12in ) round cake board
  •  pink & cream food coloring pastes
  • 1.75kg ( 3½lb ) sugarpaste / rolled fondant
  • icing/confectioners' sugar in a sugar shaker
  • 470g ( 15oz / 1 / 4 cup) buttercream
  • sugar glue
  •  hundreds and thousands/of sprinkles

EQUIPMENT

  • large rolling pin
  • sharp knife
  • medium paintbrush
  • 2 cake smoothers
  •  small circle cutter
  •  cocktail stick/toothpick

BUILDING BLOCKS CAKE METHOD

Color 375g ( 12oz ) of sugarpaste pink Roll out and cover the cake b and put aside  to dry. Trim the crust from each cake and slice the tops flat. Cut each cake into four equal-sized squares. Sandwich the squares together with buttercream to make four cubes then spread a layer of buttercream over the surface of each cube. Color 25kg ( 21/2 lb ) of sugarpaste cream. Roll out a little of the cream sugar paste, then place one side of a cube down onto it and cut around the shape. Cover all sides of each cube in the same way.

Tip the hundreds and thousands onto a plate. Decorate one side of a cube at a time Moisten the edge of the cube with sugar glue and paint a number in the center with sugar glue. Press the side of the cube down into the hundreds and thousands. As long as the glue is applied liberally, the hundreds and thousands should stick immediately. Use the cake smoothers to move the cubes around to prevent your fingers from knocking the sweets off. Leave one side of each cube undecorated for the base, then assemble all cubes on the cake board and stick them in place with sugar glue.

To make the rag doll, color 90g ( 3oz ) of sugarpaste dark pink, 15g (1/2  oz ) flesh, using a  touch each of the pink and cream food coloring pastes, and finally 7g ( ¼ oz ) yellow. Using the photograph as a guide, model the dress with 75g ( 2½oz ) of dark pink, pressing the bottom to stretch and frill. With the remaining piece of dark pink, model two oval-shaped shoes, two ball sleeves, a small, flattened circle for the collar, and two small bows.

Moisten the shoes and collar with sugar glue, then press into the hundreds and thousand Roll a flesh-colored sugarpaste sausage and cut it in half to make legs. Roll two sausages for arms, shaping rounded ends for hands. Stick everything in place. For the head, roll a flesh-colored ball, then press in the small circle cutter to indent the smile. To dimple the comers press in the end of the paintbrush. Model a nose and use hundreds and thousands for eyes

Press small pieces of yellow sugarpaste over the head for the hair. To make the plaits roll tiny sausages, then press along the edges with a cocktail stick. Stick in place with the bows. Decorate the dress and around the cake board edge with hundreds and thousands Paint the cheeks with a tiny amount of pink food coloring diluted with a drop of water.
