MATERIALS.
- 20cm ( 8in ) round cake,
- 30cm ( 12in ) round cake board
- 410g ( 13oz / 13 cups ) buttercream.
- 1.125kg ( 2½lb ) sugarpaste / rolled fondant
- green, red, cream, black & brown food coloring pastes
- icing/confectioners' sugar in a sugar shaker
- sugar glue
- foil - covered chocolate footballs
EQUIPMENT
- large rolling pin
- sharp knife
- cake smoother small circle cutter flat–tipped
- cocktail stick/toothpick
- silver net adhesive tape

FOOTBALL CRAZY CAKE METHOD:
Trim the crust from the cake and slice the top flat. Split
in half and fill with buttercream, then
spread a layer of buttercream over the surface of the cake. Scoop out
buttercream at the joint to create a slight dip. This will prevent a bulge of
excess buttercream when the cake is covered with sugar paste. Position the cake
in the center of the cake board.
Colour Ikg ( 2lb ) of sugarpaste green. Roll out, using icing sugar to prevent sticking cover the cake and board completely, trimming the excess sugarpaste from around the edge of the board with a knife. Smooth the surface with a cake smoother.
Using the photograph below as a guide, make the footballer's shorts using 22g ( ¾ oz of white sugar paste. Color 45g ( 1½oz ) of sugarpaste red. Using 35g ( 1½oz ), make the red top, smoothing out any ridges. Indent his top at the base to hollow it out and then stick it over the top of the shorts. Model a flattened circle in white sugarpaste and cut c v ' to make a collar. Shape the badge in white sugar paste, cutting the top with the small circle cutter. Roll two white socks, cutting the end of each straight. Remember that you can alter the footballer's colors to suit a favorite team if you want.
Color 30g ( 1oz ) of sugarpaste cream and use this to make the footballer's head, nose, ears, and knees as well as two sausages for the arms. Pinch around the top of the arms to create a rounded end for the hands, then flatten each hand slightly. Indent e ears with the tip of your finger. Mark his smile using the small circle cutter pressed in an angle and create dimples at each corner with the end of a cocktail stick
Make the tops of the socks red, and the sleeve edging white. Model two oval-shaped eyes. Color 7g (1/4 oz ) of sugarpaste black Make the pupils of the eyes. then roll two oval-shaped boots. Color a small amount of sugarpaste brown and cut it into thin strips for the hair. Use the side of a cocktail stick to indent his center parting.
Lay the piece of the silver net over the side of the cake. Trim leaving a 2.5cm (1 in) overlap at the edge of the cake board. Secure this overlap underneath the board using strong adhesive tape. Add the foil-covered chocolate balls, putting one in the footballer's hands.
USEFUL TIP
Before securing the silver net to the cake board, add a
length of colored ribbon or any other cake board edging.
