INGREDIENTS
- 675 g or 1½ lbs Vegetables
- 40 9 or 1½ oz butter
- 1.1 liter or 2pints stock
- salt and pepper
Yummy Soups Based on a Stock In The Microwave Method:
Peel all the vegetables, slice them finely, or grate. Put the vegetables and butter in a casserole dish and cook on HIGH for 8-10 minutes, stirring once. Add the stock and season well. Cover with a lid or cling film and cook on HIGH for 15 minutes just season and serve.
VARIATIONS
Add the following ingredients in place of vegetables Minestrone Soup
Minestrone Soup
- 1/2 cauliflower, divided into florets
- I carrot
- I courgette
- 1/2 red and green pepper
- 2 sticks celery
- 1 x 15 ml =1 tbsp tomato puree
- 1 x 396 g or 14 oz can of tomatoes
- 25 g or 1 oz egg noodles
add noodles for the last 5 minutes of cooking
Bortsch
- 675 g or 1½ lbs beetroot
- 1 x 15 ml = 1 tbsp lemon juice
- 3 x 15 ml = 3 tbsp sherry
Sieve the soup and stir in just before serving
