Yummy Cream Soups In The Microwave

INGREDIENTS

  • 1 onion, skinned and sliced
  • 25 g or 1 oz butter
  • 225 g - 450 g or 8 oz – 1lb vegetables, peeled and sliced
  • 3 x 15 ml = 3 tbsp flour
  • 400 ml or 3/4 pint stock
  • 400 ml or 3/4 pint milk
  • salt and pepper
  • 3 x 15 ml =  3 tbsp  cream ( optional )

 Yummy Cream Soups In The Microwave Method:

Put the onion, vegetables, and butter in a casserole dish and cook on HIGH for 8-10 minutes. Stir in the flour and cook on HIGH for 2 minutes. Gradually blend in the stock and milk.

Season with salt and pepper. Heat on HIGH for 12-14 minutes. For a smooth soup, blend the soup in a processor. Stir in the cream if used, and reheat on HIGH for 2 minutes.

Dish : 3 liters ( 6 pt ) casserole

VARIATIONS

For the following soups use the ingredients in place of vegetables, peeled and sliced.

Tomato

  •  450 g = 1lb tomatoes, skinned
  • I carrot

 Mushroom

  • 225gm or 8 oz  mushrooms, cleaned and sliced

 Celery

  •  I head of celery, sliced

 Onion

  • 450gm or 1lb onions, sliced

 Carrot

  • 450gm or 1lb carrots
  • I stick of celery

 Chicken

  •  150gm or 6 oz cooked, diced chicken

 Cauliflower

  •  I cauliflower, broken into florets

 Parsnip & Leek

  • 450gm or 1lb parsnips, sliced
  • I leek, sliced
