INGREDIENTS
- 900 g or 2 lbs,6 boneless chicken breasts, skinned
- 50 g or 2oz butter
- 50 g or 2oz Stilton
- salt and pepper
- 6 rashers streaky bacon rinded
- 50 g or 2oz mushrooms, sliced
- 150 ml or ½ pl red wine
- 150 ml or ½ pl chicken stock
- I clove garlic, crushed
- salt and pepper
- 2-3 x 5 ml or 2-3 tsp cornflour slacked with
- 1 x 15 or 1 tbsp ml wine
Microwave Chicken with Stilton and Red Wine Method:
In a basin cream together the stilton and butter ( If it is too hard, soften slightly on HIGH for 10-20 seconds . ) Season with a little salt and pepper. Lay the chicken breasts out flat on a board, and cut the side uppermost.
Divide the stilton mixture between the six and place it in the center of each breast. Roll up. Wrap up in
a rasher of streaky bacon and secure with a wooden cocktail stick.
In a shallow dish
arrange the mushrooms and chicken rolls.
Mix together the wine and stock with the salt and pepper and the crushed garlic, then pour over the chicken.Cover the dish with cling film and cook on MEDIUM for 16 minutes or Auto. When cooked remove the chicken.
Add the slacked cornflour, mix well, and cook on HIGH for a further 2-3 minutes or until thickened.Stir well then spoon over the chicken.
