INGREDIENTS
- 700g or 1½ lbs lamb, taken from the leg and cut into 3.75 cm ( 1 " ) cubes
- 75g or 3oz dried apricots
- 25g or 1oz butter
- I large onion, sliced
- I clove garlic, crushed
- 25g or 1oz whole almonds
- 2x 15 ml or 2 tbsps plain flour
- 2x5ml or 2 tsp ground cumin seed
- 2.5 ml or ½ tsp ground allspice
- 2x 15 ml or 2 tbsps tomato purée
- 300 ml or 1/2 pl beef stock
- salt and pepper
Microwave Armenian Lamb Method:
Put the onions, garlic, and almonds in a bowl with the butter, and cook on HIGH for 3 minutes stir in the flour and spices, and season with salt and pepper. Add the tomato purée and the stock, and stir well.
Combine the meat, apricots, and onion mixture in a casserole dish. Cover and cook on LOW for 45 minutes or on Auto Stand for 5 minutes before serving.
