INGREDIENTS
- 4 chicken portions approx. 225 g ( 8 oz ) each
- 25 g or 1oz margarine
- I onion, chopped
- 1-2 cloves garlic, crushed
- I red pepper, cored, seeded, and chopped
- 2x 5 ml or 2 tsp curry powder
- 1 x 5 ml or 1 tsp thyme
- 1 x 396 g or 1 x 14 oz tomatoes
- 2 x 15 ml or 2 tbsps sherry
- salt and pepper
- 50 g or 2 oz raisins or sultanas
- 15 ml or tbsp cornflour slaked in a little tomato juice
Microwave Spicy Chicken Method:
Put all the ingredients except sultanas and cornflour in a large casserole dish. Cover and cook on LOW for 40 minutes or on All. At the end of cooking, remove chicken portions, blend in sultanas and cornflour, and stir well.
Cook for 3-5 minutes until thickened. Pour over the chicken portions and serve with jacket potatoes or boiled rice
