INGREDIENTS
- 450 g or 1lb Chicken, diced
- ½ green pepper sliced
- ½ red pepper sliced
- 1 x 227 g 8oz pineapple chunks, drained.
- juice reserved
Sauce :
- 2 x 15 ml or 2 tbsp cornflour
- 2 x 15 ml or 2 tbsp caster sugar
- 2 x 15 ml or 2 tbsp white
wine vinegar f
- 2 x 15 ml or 2 tbsp fresh orange
juice
- 150 ml or ½ pl pineapple juice
- 2 x 15 ml or 2 tbsps soy sauce
- 1-1½ x 15 ml or 1-1½ tbsps tomato purée
- 2 x 15 ml or 2 tbsp sherry
- 4 x 15 ml or 4 tbsp oil
Microwave Sweet and Sour Chicken Method:
Mix together all sauce ingredients, blending thoroughly until smooth. Add chicken and pepper to the sauce. Cover and cook on MEDIUM for 25 minutes, or on All. Stir in the pineapple chunks and cook on HIGH for 2-3 minutes.
