Microwave Madras Curry

INGREDIENTS

  • 1 x 15 ml or 1 tbsp Oil
  • I large onion, sliced
  • 3 cloves garlic, crushed
  • 2x 5 ml or 2 tsp ground coriander
  • 1x5ml or 1 tsp ground black pepper
  • 2.5 ml or ½ tsp chili powder
  • 2.5 ml or ½ tsp ground cardamon
  • 1x5ml or 1 tsp ground cumin
  • 2.5 ml  or ½ tsp ground cloves
  • 2 x 15 ml  or 2 tbsp flour
  • 600 ml or  1 pt hot stock
  • 450 g or 1lb lamb, cut into 2 cm ( 4 " ) pieces
  • 2x 5 ml or 2 tsp ground turmeric
  • 1x5 ml or 1 tsp sugar
  • salt
  • juice of 1lemon

Microwave Madras Curry Method:

Put the oil, onion, and garlic in a casserole dish and cook on HIGH for 3 minutes. Blend in all the spices except the turmeric. Heat on HIGH for 2 minutes. Stir in the flour. Add the meat.

Blend in the hot stock. Place the plate on the meat and cover the dish with a lid. Cook on HIGH for 10 minutes then LOW for 40 minutes or on All. Finally, stir in turmeric, salt, sugar, and lemon juice. Serve with boiled rice.
