TOMATO AND BASIL QUICHE
QUICHE
- 1 cup plain flour
- 90g butter
- 1 egg yolk
- 1 tablespoon lemon juice, approximately
FILLING
- 30g butter
- 1 leek
- 3 eggs
- 300ml carton cream
- 1/2 cup grated cheese
- 3 small ripe tomatoes
- 3/4 cup chopped fresh basil
- 1/4 cup chopped parsley
- salt,
- pepper
- 1 tablespoon parmesan cheese
TOMATO AND BASIL QUICHE RECIPE:
Sin four into bowl rub in butter, and add the egg yolk and enough lemon juice to mix to firm dough Cover, and refrigerate for 30 minutes. Roll out to fit 23cm fan tin. trim edges Line tin with greaseproof paper, fill with dry beans or rice bake in a moderately hot oven for 10 minutes Remove paper and beans, return to oven, and bake further 5 minutes
Filling: Melt butter in a pan, add sliced cook until tender Combine leek, eggs, cream, and cheese in a bowl, add leek, and pour into the pastry case
Peel tomatoes, and cut into two slices Rolf edge of Tomaro sices in combined basil and parsley, and place on top of leek mixture Sprinkle with salt pepper and grated parmesan cheese Bake in a moderate oven for 30 minutes.
