MOUTHWATERING SAVORIES
CHICKEN WINGS WITH SHALLOTS
These are best marinated overnight Be careful, they spatter when frying
- 1kg chicken wings
- 1/2 cup cornflour
- 1/2 cup soy sauce
- 1/4 cup sugar
- 10 shallots of oil for deep frying
RECIPE:
Wash and dry chicken wings. Cut off wing tips at the joint ( Use wing tips in another dish or to make soup ) Cut the rest of the wings at the joint to give two pieces In a large bowl, combine cornflour, soy sauce, and sugar and mix well until sugar is dissolved Add chopped shallots and wings, stand for 3 hours or cover and refrigerate overnight, turn occasionally Deep fry in hot oil until golden brown Drain on absorbent paper.
MINI FLAKY PIZZAS
Prepare these on their trays several hours before required Bake just before serving
- 2 sheets of ready-rolled puff pastry
- 2 tablespoons tomato paste. approximately
- 60g sliced salami
- 3 tomatoes
- 250g mozzarella cheese
- 60g stuffed olives
- 45g can anchovy fillets dried basil
RECIPE:
Use an 8cm cutter to cut nine rounds from each sheet of pastry Place pastry rounds on oven trays Spread each round lightly with tomato paste Top each with a salami slice, then a slice of peeled tomato Sprinkle lightly with basil Sprinkle with grated mozzarella top with sliced olives and drained chopped anchovies Bake in moderately hot oven 10 to 15 minutes or until well-browned Place on a wire rack to cool 5 minutes before serving
