MANGO LIQUEUR PANCAKES 

PANCAKES

  •  ½ cup plain flour
  •  2 eggs 
  • 1/2 cup milk 

FILLING 

  • 125g butter
  •  4 tablespoons sugar 
  • 1/2 cup orange juice 
  • 2 tablespoons Cointreau or Grand Marnier 
  • 2 tablespoons brandy 
  • 2 x 470g cans of sliced mangos 

MANGO LIQUEUR PANCAKES RECIPE:

Sift flour into a bowl, add eggs, and stir until the mixture is smooth Gradually stir in milk, mix to smooth batter, and stand for 30 minutes Heat pan. grease well From a small jug pour 2 to 3 tablespoons of pancake mixture into the pan, swirling batter evenly around the pan Cook until light golden brown. Toss or turn the pancake, and cook the other side Repeat with the remaining batter. 

Filling: Melt butter in a pan, add sugar, stir until sugar is golden brown, add orange juice, and stir until sugar is dissolved. Add Cointreau and brandy, and set aflame. When flames die, simmer the sauce gently for 2 minutes, and remove the pan to heat. Drain mango slices, cut into pieces of desired size Divide mango pieces between pancakes. fold each pancake into half, then into quarters Place into sauce, return pan to heat, simmer for 2 minutes or until pancakes are heated through, spooning sauce over the pancakes If desired. serve with ice cream or whipped cream.
