STRAWBERRY LIQUEUR PANCAKES

- ½ cup plain flour
- 2 eggs
- 1/4 cup milk
FILLING
- 250g cottage cheese
- 1 egg yolk
- 2 tablespoons sugar
- 1 teaspoon grated orange rind
- 1/2 punnet strawberries
SAUCE
- 30g butter
- ½ cup sugar
- 1/4 cup orange juice
- 1 tablespoon Grand Marnier
- 1/2 punnet strawberries
- 125g frozen or fresh raspberries or boysenberries
STRAWBERRY LIQUEUR PANCAKES RECIPE:
Sift flour into a bowl, add eggs, and stir until the mixture is smooth Gradually stir in milk, mix to a smooth batter, and stand 30 minutes From the jug pour 2 to 3 tablespoons of batter into heated. greased pan Cook until light golden. brown. Toss or turn the pancake, and cook the other side. Repeat with the remaining batter
Filling: Combine sieved cottage cheese with egg yolk. sugar and orange rind, mix well Slice strawberries Add to cottage cheese mixture spread mixture evenly over each pancake, and roll up. top with hot Sauce Serve with whipped cream and extra strawberries if desired Sauce: Piace strawberries and thawed raspberries into a food processor or blender, and process until pureed Sieve to remove seeds Heat butter in pan. add sugar, and stir until combined Add orange juice, Grand Marnier, and pureed berries and stir to combine. Bring Sauce to the boil
