 CREAMY SCALLOP SOUP 

INGREDIENTS

  • 2 fish fillets 
  • 3 cups water 
  • ½ cup dry white wine 
  • salt, 
  • pepper 
  • 375g scallops 
  • 60g butter 
  • 6 shallots 
  • 125g mushrooms 
  • 1 tablespoon chopped parsley 
  • ½ cup cream 

 CREAMY SCALLOP SOUP RECIPE;

Remove skin and bones from fish, and place in pan with water, wine, salt, and pepper: bring to boil. Reduce heat, cover, and simmer for 25 minutes. Strain through a sieve, reserve fish, and stock. Heat butter in the pan, add chopped shallots and sliced mushrooms, and cook for 1 minute. Add reserved stock, fish that has been broken into small pieces, and parsley: simmer for 10 to 15 minutes. Add cream and halved scallops, heat without boiling. 

Serves 4 to 6.
