CHINESE BROCCOLI AND CHICKEN SOUP 

INGREDIENTS:

  • 1 whole chicken breast 
  • 2cm piece of green ginger 
  • 2 liters water 
  • salt, 
  • pepper 
  • ½ teaspoon sugar 
  • 1 teaspoon cornflour 
  • 2 slices ham 
  • 190g can champignons 
  • 375g broccoli 
  • 3 teaspoons soy sauce 
  • 1 1/2 tablespoons cornflour, extra 
  • 2 tablespoons 
  • water, extra 

CHINESE BROCCOLI AND CHICKEN SOUP RECIPE:

Remove skin from chicken breast, and cut meat from breast bones. Place bones peeled and thinly sliced ginger and water in a pan. bring to a boil, reduce heat, and simmer covered 20 minutes. Discard bones. Cut meat from the breast into fine strips, combine with salt, sugar, and cornflour, and mix well Cut ham into narrow strips. drain and slice champignons. 

Cut broccoli into small flowerets, put in another pan with enough boiling salted water to cover, boil for 1 minute, drain, rinse under cold water, and drain again. Add meat and ham to stock, and stir separate strips. Boil uncovered for minutes Add broccoli and cham pignons and stir in blended soy sauce. extra cornflour and extra water. Stir until boiling. season with salt and pepper. 

Serves 6
