MELBA TOAST
Melba Toast is an ideal accompaniment to pates or terrines. It is simple to make and will keep for months in an airtight container.
MELBA TOAST RECIPE:
To make it, take a square loaf of white unsliced bread, and trim away all crusts. Cut the loaf in half to make it easy to handle, then cut each half through diagonally. Place the widest side of each piece on the board and use a sharp or electric knife to cut slices as thinly as possible. Place triangles on ungreased flat oven trays, and bake in a moderate oven for about 20 minutes, or until bread is golden brown, curled, and crisp. It must be completely dried out, or it will develop mold during storage. Cool before storing in an airtight container.
