AUSTRALIAN PUMPKIN SOUP
INGREDIENTS
- 500g pumpkin
- 2 onions
- 1 carrot
- 3 1/4 cups chicken stock
- 1/4 teaspoon nutmeg
- salt,
- pepper
AUSTRALIAN PUMPKIN SOUP RECIPE:
Peel pumpkin, onions, and carrot, cut into pieces. Put all vegetables in pan Add chicken stock and nutmeg salt and pepper Bring to boil reduce heat and simmer covered until pumpkin is tender. Puree in a blender or food processor, or rub through a sieve Chill Serve with a spoonful of sour cream and chopped chives
Serves 4.
