ITALIAN AMARETTI
YOU WILL NEED :
- 125g ( 40z ) ground almonds
- 1 cup sugar
- 2 large egg whites
- ½ teaspoon vanilla
- 1 or 2 drops of almond essence
- blanched almonds for decorating
ITALIAN AMARETTI RECIPE:
Combine ground almonds, sugar, unbeaten egg whites, vanilla, and almond essence, and mix well. Place the mixture in a small bowl of electric mixer.
Beat mixture on medium speed for 3 minutes. Let mixture stand for 5 minutes.
Spoon the mixture into a piping bag fitted with a 1cm ( in ) plain tube, pipe in a circular motion from the center, to make biscuits about 4cm ( 1 / 2in ) in
diameter ( or they can be smaller ). Pipe onto lightly greased trays that
have been dusted with flour; shake off excess flour before piping. Place a
blanched almond or almond half on top of each biscuit. Stand amaretti
uncovered at room temperature overnight.
Bake in a moderate oven for 12 to 15 minutes or until the tops are lightly browned. leave on the trays for a few minutes before removing them with a metal spatula to cook on a wire rack.
Note: Coarsely ground almonds will give better results in these biscuits than finely ground.
