ITALIAN ALMOND BISCUITS
YOU WILL NEED :
- 1 egg white
- ½ cup sugar
- 1 tablespoon honey
- 250g ( 80z ) ground almonds
- 1 teaspoon grated lemon rind
- 1 tablespoon self-raising flour
TOPPING
- ½ cup sugar
- 1 egg white
- ½ teaspoon vanilla
ITALIAN ALMOND BISCUITS RECIPE:
Beat egg white until soft peaks form, gradually add sugar and honey, and beat until sugar has dissolved. Mix well with lemon rind, ground almonds, and sifted flour.
Shape tablespoonfuls of the mixture
into lengths approximately 5cm ( 2in ) long. Put biscuits onto greased oven
trays. Bake in a moderately slow oven for 40 to 45 minutes. Remove from oven.
Combine ingredients for topping by mixing together sugar, and two teaspoons of the lightly beaten egg white and vanilla. Brush the tops of the biscuits with the remaining egg white. Press a teaspoonful of sugar mixture on top of warm biscuits with a spoon. The top ping will harden on cooling.
