CURRIED ZUCCHINI SOUP
INGREDIENTS
- 1 onion
- 30g butter
- 2 teaspoons curry powder
- 1 clove garlic
- 500g zucchini
- 1 tablespoon lemon juice
- salt,
- pepper
- 2 1/2 cups chicken stock
- ½ cup cream
CURRIED ZUCCHINI SOUP RECIPE:
Coarsely chop onion; melt butter in a pan, add onion, curry powder, and crushed garlic. Cook, stirring for a few minutes, or until the onion is transparent. place mixture into blender or food processor with roughly chopped zucchini, lemon juice, and about half the stock Biend or process until vegetables are finely chopped.
Stir in remaining stock and cream, cover, and refrigerate for several hours Push through a fine strainer, and discard vegetable pulp. season with salt and pepper, and refrigerate before serving
