BEEF AND VEGETABLE CONSOMME
INGREDIENTS:
- 430g can beef consomme
- 1 1/4 cups water
- 1/4 cup orange juice
- 2 carrots
- 2 zucchini
BEEF AND VEGETABLE CONSOMME RECIPE:
Piace consomme in the pan, add water and strained orange juice, bring to a boil, reduce heat, and simmer uncovered for 2 minutes Cut carrots and zucchini into thin strips Bring a pan of water to boil
add carrots and zucchini and cook, uncovered, for 2 minutes drain, and rinse under
cold running water Add vegetables to soup Refrigerate covered until chilled
Serves 6
