VEGETABLE PICKLES 

YOU WILL NEED:

  • 1/4cauliflower
  • 1 cucumber
  • 2 carrots
  • 6 small onions
  • 1 red pepper
  • 2½ cups red or white wine vinegar
  • 12 black peppercorns
  • 2 teaspoons mustard seeds

VEGETABLE PICKLES RECIPE:

Cut cauliflower into small flowerets. Slice cucumber into quarters lengthwise, remove seeds, then cut each quarter in half lengthwise and across. Scrape carrots, cut into thick slices lengthwise, then cut each slice in half across. Peel onions. Seed pepper cut into large pieces.

Cook cauliflower, carrot, and onion in boiling salted water for 2 minutes; drain. Combine drained vegetables with cucumber and pepper. Pack vegetables into a hot sterilized jar.

Combine wine vinegar with peppercorns and mustard seeds. Pour over vegetables to cover completely. Stand at least one week before using Makes about 1½ liters.
