EGGPLANT APPETIZER

YOU WILL NEED:

  • 2 large eggplant
  • 1 cup oil
  • ½ cup oil, extra
  • 3 ripe tomatoes
  • 3 cloves garlic
  • 1 tablespoon tomato paste
  •  ½ cup water salt, pepper

EGGPLANT APPETIZER RECIPE

Cut washed, unpeeled eggplant lengthwise into 5mm ( in ) slices. Cut slices into 6cm ( 2  1/2 in ) lengths, as shown.

Heat oil in a frying pan, add half the eggplant to the pan, and cook for 5 minutes or until the eggplant is soft. Remove from pan with a slotted spoon, and repeat with remaining eggplant.

Heat extra oil in a frying pan, add peeled and crushed garlic, peeled, seeded, and chopped tomatoes, tomato paste, and water; cook uncovered for 10 minutes or until sauce is thick. Add eggplant, salt, and pepper to the sauce, and stir lightly to combine. Spoon onto serving plate; serve hot or cold.
