SWEET PINK PASTA WITH WHITE CHOCOLATE SAUCE
INGREDIENTS
- 1 cup plain flour
- 2 tablespoons icing sugar
- 1 egg, lightly beaten red food coloring
WHITE CHOCOLATE SAUCE
- 1/2 cup milk
- 1/2 cup cream
- 250g white chocolate, grated
- 2 teaspoons Kahlua
- pinch ground nutmeg
SWEET PINK PASTA WITH WHITE CHOCOLATE SAUCE METHOD:
Combine sifted flour and icing sugar with an egg and a tiny drop of coloring in a food processor. Process until the mixture forms a ball. Knead dough on a lightly floured surface until smooth and evenly colored; knead in more coloring, if desired. Roll the dough through the pasta machine on the thickest setting, fold it in half, and repeat several times.
Roll dough until 1mm thick using a pasta machine. Cut into 1cm strips using the fettuccine attachment on the machine. Add pasta to a large pan of boiling water, boil, uncovered, for about 5 minutes or until just tender; drain.
Serve warm pasta with warm sauce. White Chocolate Sauce: Heat milk and cream in a pan, do not boil. Remove from heat, add chocolate, stir until melted, stir in liqueur and nutmeg.
Serves 4.
Note; Pasta and sauce can be made a day ahead. Storage: Covered, in the refrigerator. Freeze: Not suitable.
Microwave: Pasta suitable.
